Cherry Bread

this recipe comes from "mom's favourite recipe"...
a homemade cookbook that rubby's mom gave him one christmas.

Ingredients:

  • 1/4 cup shortening
  • 1 cup lightly packed brown sugar
  • 1 beaten egg
  • 2 cups of flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 cups milk
  • 1/3 cup syrup from red maraschino cherries
  • 1/2 cup drained red maraschino cherries, quartered
  • 1/2 cup chopped walnuts

Preparation:

  • preheat oven to 350°f
  • in a bowl, cream shortening
  • add egg
  • beat well
  • in another bowl, blend or sift to gether flour, baking powder and salt
  • in another bowl combine milk, syrup
  • add dry ingredient to creamed mixture alternately with milk mixture
  • combine after each addition but do not beat
  • carefully fold in cherries and walnuts
  • pour into greased 9x5 loaf pan
  • let stand for 20 minutes
  • bake for 55-60 minutes
