Apple Maple Pork Tenderloin

Ingredients:

  • 2 pork tenderloins with membrane removed
  • 6 slices bacon
  • 2 tbsp olive oil
  • 3 apples peeled, cored, and sliced
  • 1 cup white wine
  • 1/2 cup of pure maple syrup
  • 3 tbsps brown sugar

Preparation:

  • Dice bacon and fry in an oven proof skillet.
  • Once bacon is brown, remove from fat and set aside.
  • Remove all the bacon fat from the skillet except for 2 tablespoons.
  • Add 2 tablespoons of olive oil to stop the bacon fat from burning.
  • Place tenderloins in skillet and briaze all sides until they are a nice golden brown.
  • Remove the tenderloins from skillet and set aside.
  • Add 1 cup of white wime to deglaze the pan.
  • Add the apples, maple syrup, and brown sugar and bring to a boil.
  • Once the liquid has thickened slightly, return the bacon and tenderloins to the skillet.
  • Toss to coat the tenderloins in the apple mixture.
  • Cover and bake at 350 for approx 30 minutes (45 if you are using large tenderloins or if you are cooking more than 2).
