Apple Maple Pork Tenderloin

Ingredients:
- 2 pork tenderloins with membrane removed
- 6 slices bacon
- 2 tbsp olive oil
- 3 apples peeled, cored, and sliced
- 1 cup white wine
- 1/2 cup of pure maple syrup
- 3 tbsps brown sugar
Preparation:
- Dice bacon and fry in an oven proof skillet.
- Once bacon is brown, remove from fat and set aside.
- Remove all the bacon fat from the skillet except for 2 tablespoons.
- Add 2 tablespoons of olive oil to stop the bacon fat from burning.
- Place tenderloins in skillet and briaze all sides until they are a nice golden brown.
- Remove the tenderloins from skillet and set aside.
- Add 1 cup of white wime to deglaze the pan.
- Add the apples, maple syrup, and brown sugar and bring to a boil.
- Once the liquid has thickened slightly, return the bacon and tenderloins to the skillet.
- Toss to coat the tenderloins in the apple mixture.
- Cover and bake at 350 for approx 30 minutes (45 if you are using large tenderloins or if you are cooking more than 2).
