Apple Soufflé With Maple Syrup

Ingredients:

  • 2 Tablespoons butter
  • 2 large eggs
  • 1/2 teaspoon vanilla
  • 1 teaspoon grated lemon zest
  • 6 Tablespoons flour
  • 6 Tablespoons milk
  • 1 Granny Smith apple, sliced
  • Lemon juice
  • 1/2 teaspoon cinnamon
  • 2 Tablespoons sugar
  • Pinch of nutmeg
  • Icing (confectioners')
  • sugar Maple syrup

Preparation:

  • Preheat oven to 450°f.
  • Peel, core, and slice apples; squeeze lemon juice over.
  • Place 1 Tablespoon of butter in each of 2 individual souffle dishes.
  • Heat in the oven until the butter is bubbly, about 7 minutes.
  • Beat the eggs, milk, and vanilla together.
  • Add flour and zest.
  • Pour into the baking dishes, dividing mixture equally.
  • Top with sliced apples.
  • Combine cinnamon, sugar, and nutmeg; sprinkle over apples.
  • Bake 20 minutes.
  • Dust with icing sugar and serve with maple syrup.
