Apple Soufflé With Maple Syrup

Ingredients:
- 2 Tablespoons butter
- 2 large eggs
- 1/2 teaspoon vanilla
- 1 teaspoon grated lemon zest
- 6 Tablespoons flour
- 6 Tablespoons milk
- 1 Granny Smith apple, sliced
- Lemon juice
- 1/2 teaspoon cinnamon
- 2 Tablespoons sugar
- Pinch of nutmeg
- Icing (confectioners')
- sugar Maple syrup
Preparation:
- Preheat oven to 450°f.
- Peel, core, and slice apples; squeeze lemon juice over.
- Place 1 Tablespoon of butter in each of 2 individual souffle dishes.
- Heat in the oven until the butter is bubbly, about 7 minutes.
- Beat the eggs, milk, and vanilla together.
- Add flour and zest.
- Pour into the baking dishes, dividing mixture equally.
- Top with sliced apples.
- Combine cinnamon, sugar, and nutmeg; sprinkle over apples.
- Bake 20 minutes.
- Dust with icing sugar and serve with maple syrup.
