Apricot Ginger Chicken Breasts

Ingredients:
2 tbsp. finely chopped onion
1 tsp. olive oil
1/4 cup apricot preserves
1/4 cup ketchup
1 tbsp. red wine vinegar
1/4 tsp. ground ginger
4 skinless, boneless chicken breast halves
Preparation:
for sauce, in a small saucepan cook onion in hot oil until tender
stir in preserves, ketchup, vinegar, and ginger
bring to a boil; reduce heat
cover and simmer for 3 minutes
remove from heat
preheat grill to medium
grill chicken, uncovered, until chicken is tender and no longer pink, turning once and brushing with sauce during the last 5 minutes of grilling
reheat remaining sauce and pass with chicken
