Fiddlehead Quiche

We went for a walk in Dawson woods and found some fiddleheads just coming up. Note that only ostrich fern fiddleheads are edible!

Ingredients:

  • 1 pie crust -- uncooked
  • 2 teaspoons flour
  • 3 large eggs
  • 1 cup fiddleheads
  • 1 cup chopped mushrooms -- fresh
  • 1 cup cheddar cheese -- grated
  • 2 tbsp green onions
  • 3/5 cups milk
  • 3 strip bacon -- cooked crisp
  • salt
  • pepper
  • paprika

Preparation:

  • Sprinkle pie shell with flour.
  • Beat the eggs.
  • Add milk, cheese, fiddleheads, mushrooms, green onions and seasonings.
  • Pour into pie shell.
  • Top with crumbled bacon.
  • Bake at 190 C for 35 to 40 min or until the top is golden brown
