Bring all ingredients (except for the sugar) to a boil
Add sugar
Boil hard for 1 full minute
Notes:
Wild ginger is medicinal. For my own purposes I still use it but when I make the jam for others I substitute a smaller amount of store bought ginger instead.
the final result is a bit runnier than most jams
Prefer to eat the jam with a light rye bread.
It also tastes better when eaten outdoors on a nice sunny day
