Dandelion Jam

Ingredients:

  • 2 cups yellow florets (green brackets removed)
  • Juice of 2 lemons
  • 3 cups water
  • 1 package certo
  • 1 tbsp grated ginger
  • 5 cups sugar

Preparation:

  • Bring all ingredients (except for the sugar) to a boil
  • Add sugar
  • Boil hard for 1 full minute

Notes:

  • Wild ginger is medicinal.  For my own purposes I still use it but when I make the jam for others I substitute a smaller amount of store bought ginger instead.
  • the final result is a bit runnier than most jams
  • Prefer to eat the jam with a light rye bread.
  • It also tastes better when eaten outdoors on a nice sunny day
