Forgotten Apple Pie

Ingredients:

  • 1 large egg
  • 2 tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1 cup sour cream
  • 2/3 cup sugar
  • 1/2 tsp. vanilla
  • 3 1/2 cups of cooking apples, peeled and chopped (such as McIntosh)
  • 1 unbaked 9-inch pie shell

    topping:
  • 1/3 cup brown sugar, packed
  • 1/3 cup all purpose flour
  • 1/4 cup butter, softened

Preparation:

  • Beat egg, flour and salt together in medium bowl until smooth
  • Beat in sour cream, sugar and vanilla until sugar is dissolved
  • Add apple
  • Stir
  • Turn into pie shell
  • Bake on bottom rack in 400 F oven for 10 minutes
  • Reduce heat to 350 F
  • Bake for 20 minutes

    Topping:
  • Mix brown sugar, flour and butter until crumbly
  • Sprinkle over pie
  • Bake
