Asparagus Bredie

Ingredients:

  • 2 Tablespoons Olive Oil
  • 2 Medium Onions -- Sliced
  • 3 Cloves Garlic -- Chopped
  • 2 Pounds Meat -- Chicken Or Lamb
  • 1 Cup Stock
  • Salt And Pepper -- To Taste
  • 2 Pounds Asparagus
  • 3 Medium Pototes -- Sliced
  • 1 Lemon Lemon Juice

Preparation:

  • sauté onions meat and garlic in oil for 10 minutes;
  • add stock, salt and pepper, cover and simmer 10 minutes;
  • add potatoes, cover, simmer 20 mintues;
  • add asparages, cover and simmer 7 minutes
  • remove from heat
  • stir in lemon juice
  • serve over rice.
