Asparagus Wrapped In Ham (with Garlic Cheese Mashed Potatoes)

Ingredients:
- 200 g of ham slices
- 1 can of asparagus tips
- 1 teaspoon of cornstarch
- 2 tsp lime juice (optional)
- 7 medium potatoes
- 2 tbsp butter
- 3 cloves garlic
- milk
- 1 1/2 cups grated cheddar cheese
Preparation:
- preheat oven to 375°F
- peel, cut into small cubes, and boil potatos.
- in the meantime, roll asparagus into ham slices (approx. 2-3 asparagus tips per slice of ham) and place in an ovenproof dish.
- pour rest of asparagus juice into pan and add enough water to just cover the bottom of the pan.
- bake asparagus in oven.
- in a small saucepan melt butter and add crushed garlic.
- stir and cook for 1 minute.
- drain water from potatoes and mash them.
- add garlic butter mixture (keep pan aside), 1 cup of grated cheese, milk to get desired creamy consistency, and salt to taste.
- mix well.
- put oven on broil and bake asparagus until slightly crispy at edges.
- pour the asparagus juice into the saucepan.
- stir cornstarch into 1/2 cup of cold water and add to asparagus juice.
- add lime juice.
- bring mixture to simmer, stirring constantly.
- to serve pour sauce over asparagus and garnish mashed potatos with remaining cheddar cheese.
