Asparagus Wrapped In Ham (with Garlic Cheese Mashed Potatoes)

Ingredients:

  • 200 g of ham slices
  • 1 can of asparagus tips
  • 1 teaspoon of cornstarch
  • 2 tsp lime juice (optional)
  • 7 medium potatoes
  • 2 tbsp butter
  • 3 cloves garlic
  • milk
  • 1 1/2 cups grated cheddar cheese

Preparation:

  • preheat oven to 375°F
  • peel, cut into small cubes, and boil potatos.
  • in the meantime, roll asparagus into ham slices (approx. 2-3 asparagus tips per slice of ham) and place in an ovenproof dish.
  • pour rest of asparagus juice into pan and add enough water to just cover the bottom of the pan.
  • bake asparagus in oven.
  • in a small saucepan melt butter and add crushed garlic.
  • stir and cook for 1 minute.
  • drain water from potatoes and mash them.
  • add garlic butter mixture (keep pan aside), 1 cup of grated cheese, milk to get desired creamy consistency, and salt to taste.
  • mix well.
  • put oven on broil and bake asparagus until slightly crispy at edges.
  • pour the asparagus juice into the saucepan.
  • stir cornstarch into 1/2 cup of cold water and add to asparagus juice.
  • add lime juice.
  • bring mixture to simmer, stirring constantly.
  • to serve pour sauce over asparagus and garnish mashed potatos with remaining cheddar cheese.
