Baby Jaguar Birthday Cake

Ingredients:

Preparation:

  • Make a 9x13 inch cake as per the instructions on the box.
  • Prepare banana pudding as per the instructions on the box.
  • Slice the cake in half.
  • Spread banana pudding in the middle, place slices of banana throughout and top up until even with the banana pudding.
  • Using half the cream cheese frosting, frost the entire cake.
  • Refrigerate to set.
  • To make the jaguar spots and eyes, pipe the outlines on some wax paper on a cookie sheet.
  • Fill the centers with caramel sauce.
  • Freeze.
  • Place paper cutout of baby jaguar lightly on cake and trace the outline with a toothpick.
  • Pipe chocolate sauce all along the outlines.
  • Add eyes and spots.
  • Refrigerate to set.
  • Take a third of the remainder of cream cheese frosting, mix with leftover caramel sauce til desired colour and add icing sugar as needed to get good consistency.
  • Use to pipe 'fur' on baby jaguar.
  • Take rest of cream cheese frosting and add icing sugar to get good piping consistency.
  • Pipe white fur on baby jaguar.
  • Take the rest of frosting and divide in half.
  • Colour half pink and half green with food colouring.
  • Pipe pink icing in ears and for nose.
  • Pipe clusters of flowers along bottom edge of cake.
  • Pipe green leaves along bottom edge of cake between flowers.

Notes:

The cake works well assembled the day before. The banana pudding and bananas were a big hit... I think they make the cake less dry and even the kids who normally don't eat cake enjoyed it.
The caramel sauce icing was a bit of trial and error... Rubby had a batch of caramel sauce that had crystallized into fudge that i was using. It worked well cause it gave a heavier texture but it had bits of caramel which got stuck in the piping nib. I just switched to a larger nib and the bits no longer got stuck.
