Shortbread

Recipe from "cape breton pictorial cookbook" - a gift from my aunt babara

Ingredients:

  • 1 cup soft butter
  • 1/2 cup brown sugar
  • 2 cups flour
  • 1 tsp. vanilla

Preparation:

  • in a bowl, cream butter, vanilla and sugar until light and creamy
  • gradually add the flour 1/4 cup at a time mixing well after each addition
  • add just enough so dough can be gathered into a ball
  • knead dough on a floured surface until smooth
  • roll dough to 1/4" thickness
  • cut in desired shapes with floured cutter
  • place on ungreased baking sheet
  • bake 300f for 15-20 minutes or until lightly browned
