Spicy Cajun Stir-fry Beef

Ingredients:

  • 1 can (28oz/796ml) diced tomatoes
  • 2 tbsp cornstarch
  • 400g beef stir-fry strips
  • vegetable oil cooking spray
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup sweet green pepper, chopped
  • 2 cloves garlic, minced
  • 2 tsp cajun spice mix
  • 1 cup frozen or canned corn, drained
  • salt & pepper
  • fresh parsley, chopped

Preparation:

  • drain tomatoes, collecting juice in sealable freezer bag and reserving tomatoes
  • add cornstarch to juice; seal bag and combine
  • add beef strips to bag; seal and refrigerate for up to 30 minutes...
  • drain meat, reserving marinade
  • spray large nonstick frying pan or wok with cooking spray
  • stir-fry beef strips over medium0high heat for 2 minutes or until browned but still pink on the inside
  • transfer to a bowl
  • add onion, celery, green pepper and garlic to pan; stir-fry for 5 minutes or until almost tender-crisp
  • stir in cajun spice mix, beef and any juices, tomatoes, marinade and corn
  • bring to a boil; cook, stirring, for 1 to 2 minutes or until sauce is thickened
  • remove from heat
  • season to taste with salt and pepper
  • served garnished with parsley
