Spicy Cajun Stir-fry Beef

Ingredients:
1 can (28oz/796ml) diced tomatoes
2 tbsp cornstarch
400g beef stir-fry strips
vegetable oil cooking spray
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup sweet green pepper, chopped
2 cloves garlic, minced
2 tsp
cajun spice mix
1 cup frozen or canned corn, drained
salt & pepper
fresh parsley, chopped
Preparation:
drain tomatoes, collecting juice in sealable freezer bag and reserving tomatoes
add cornstarch to juice; seal bag and combine
add beef strips to bag; seal and refrigerate for up to 30 minutes...
drain meat, reserving marinade
spray large nonstick frying pan or wok with cooking spray
stir-fry beef strips over medium0high heat for 2 minutes or until browned but still pink on the inside
transfer to a bowl
add onion, celery, green pepper and garlic to pan; stir-fry for 5 minutes or until almost tender-crisp
stir in cajun spice mix, beef and any juices, tomatoes, marinade and corn
bring to a boil; cook, stirring, for 1 to 2 minutes or until sauce is thickened
remove from heat
season to taste with salt and pepper
served garnished with parsley
