Ingredients:
- 1 cup of red lentils
- 2 tomatoes
- chop 1 onion
- 2 cloves of garlic
- 1/2 tsp salt
Preparation:
- (soak in 1 cup of water for 5 minutes)
- in pot heat olive oil
- add onion and garlic
- reduce heat to minimum
- cut 2 tomatoes and add to pot
- add lentils with the water
- and add 1/2 cup water, 1/2 tsp salt
- raise the heat to high, and stir
- when boiling reduce heat to med-low, stir, cover and wait until thickened and lentils soft
(about 20-30 minutes)
