Sylvia's Deluxe Lentils

Ingredients:

  • 1 cup of red lentils  
  • 2 tomatoes
  • chop 1 onion
  • 2 cloves of garlic
  • 1/2 tsp salt

Preparation:

  • (soak in 1 cup of water for 5 minutes)
  • in pot heat olive oil
  • add onion and garlic
  • reduce heat to minimum
  • cut 2 tomatoes and add to pot
  • add lentils with the water
  • and add 1/2 cup water, 1/2 tsp salt
  • raise the heat to high, and stir
  • when boiling reduce heat to med-low, stir, cover and wait until thickened and lentils soft (about 20-30 minutes)
