Tiramisu

Ingredients:

  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 3/4 cup strong brewed coffee
  • 2/3 cup brandy
  • 1 lb mascarpone cheese
  • 2 cups whipping cream
  • 48 soft lady fingers
  • 1/4 cup cocoa powder
  • 1 oz bittersweet chocolate, grated

Preparation:

  • in heatproof bowl, beat egg yolks with sugar for 5 minutes or until pale and thickened
  • beat in 1/4 cup each of the coffee and brandy
  • set bowl over saucepan of simmering water
  • beat at low speed for 7 minutes or until thickened and foamy
  • let cool
  • in bowl, stir mascarpone until smooth
  • stir in one-third of the egg mixture
  • fold in remaining egg mixture
  • in separate bowl, whip cream
  • stir one-third into cheese mixture
  • fold in remaining whipped cream
  • combine remaining coffee and brandy
  • arrange half of the lady fingers in 13 x 9 inch glass baking dish or similar size shallow serving dish
  • brush with half of the coffee mixture
  • spread with half of the cream mixture
  • sift half of the cocoa over top
  • repeat layers
  • cover and refrigerate for 12 hours
  • garnish with chocolate
