Ingredients:
6 egg yolks
1/2 cup granulated sugar
3/4 cup strong brewed coffee
2/3 cup brandy
1 lb mascarpone cheese
2 cups whipping cream
48 soft lady fingers
1/4 cup cocoa powder
1 oz bittersweet chocolate, grated
Preparation:
in heatproof bowl, beat egg yolks with sugar for 5 minutes or until pale and thickened
beat in 1/4 cup each of the coffee and brandy
set bowl over saucepan of simmering water
beat at low speed for 7 minutes or until thickened and foamy
let cool
in bowl, stir mascarpone until smooth
stir in one-third of the egg mixture
fold in remaining egg mixture
in separate bowl, whip cream
stir one-third into cheese mixture
fold in remaining whipped cream
combine remaining coffee and brandy
arrange half of the lady fingers in 13 x 9 inch glass baking dish or similar size shallow serving dish
brush with half of the coffee mixture
spread with half of the cream mixture
sift half of the cocoa over top
repeat layers
cover and refrigerate for 12 hours
garnish with chocolate
