Ingredients:

  • 2 c rice
  • 1 clove garlic
  • A piece of fresh ginger
  • 2 onions
  • 2 tbsp ghee or butter
  • 3/4 c tomato soup
  • 2 1/4 c water
  • salt to taste

Preparation:

  • clean, wash, and drain rice; set aside.
  • slice garlic and ginger.
  • chop one onion and slice the other.
  • heat butter in a pan; add garlic, ginger, and chopped onion.
  • saute till golden brown.
  • add rice and saute, stirring constantly.
  • add tomato soup and water.
  • cover pan and cook on low heat until rice is done; add salt.

Notes:

Sauté sliced onion until golden brown and use it as garnish on top of rice.
