White Potato Curry

Ingredients:

  • 6 Medium Potatoes -- cooked and cubed
  • 3 Tablespoons Olive Oil
  • 1 Large Onion -- chopped
  • 3 Cloves Garlic -- chopped
  • 1 Stick Cinnamon
  • 1 Teaspoon Crushed Red Pepper
  • 1/2 Teaspoon Turmeric
  • 1 Teaspoon Cumin
  • 1 Large Tomato -- cubed
  • 2 Cups Coconut Milk
  • 1 Cup Water

Preparation:

  • Heat oil in skillet, brown onoins and garlic for 5 minutes.
  • Add cinnamon, red pepper, turmeric, cumin and tomato.
  • Saute 5 minutes.
  • Add milk and water, bring to boil.
  • Add potatoes and simmer 10 minutes
  • serve over rice.

Notes:

  • this is a decent vegetarian curry... I would probably make it again
