White Potato Curry

Ingredients:
6 Medium Potatoes -- cooked and cubed
3 Tablespoons Olive Oil
1 Large Onion -- chopped
3 Cloves Garlic -- chopped
1 Stick Cinnamon
1 Teaspoon Crushed Red Pepper
1/2 Teaspoon Turmeric
1 Teaspoon Cumin
1 Large Tomato -- cubed
2 Cups Coconut Milk
1 Cup Water
Preparation:
Heat oil in skillet, brown onoins and garlic for 5 minutes.
Add cinnamon, red pepper, turmeric, cumin and tomato.
Saute 5 minutes.
Add milk and water, bring to boil.
Add potatoes and simmer 10 minutes
serve over rice.
Notes:
this is a decent vegetarian curry... I would probably make it again
