Zucchini Cake

Ingredients:

  • 1 1/2 cup all purpose flour
  • 1 cup graham wafer crumbs
  • 2 teaspoon baking powder
  • 1 teaspoon soda
  • 1 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 cups grated unpeeled zuccini
  • 1 cup chopped nuts (walnuts)
  • 1 1/2 cup vegetable oil
  • 2 cups brown sugar
  • 4 eggs

Preparation:

  • Combine flour, graham crumbs, baking powder, soda, salt and spices.
  • Add zuccini and nuts toss lightly.
  • Beat oil, sugar and eggs until creamy, add zuccini crumb mixture, beat well.
  • Pour in greased 10 inch Bundt pan or large tube pan.
  • Bake at 300 degree F for 1 hour and 10 minutes or until toothpick comes out clean.
