Savoury Strawberry Pizza

Ingredients:

  • 14" pizza Crust, baked all the way
  • 1/2 cup goat cheese, divided
  • 1 cup diced cooked/grilled chicken breast
  • 2 cups strawberries, sliced
  • 2 tbsp White Balsamic Vinegar reduction*
  • Handful of Greens such as baby spinach, arugula, frisee -- your choice
  • 2 Tbsp Red Balsamic Vinegar Reduction**

Preparation:

  • On warm crust smear a thin coating of Goat Cheese – about 1/4 Cup
  • Top with Chicken
  • in a bowl Toss sliced strawberries with White Balsamic Vinegar reduction; place over chicken.
  • Bake pizza at 400 F for 10 minutes
  • Remove from oven and top with remaining 1/4 Cup crumbled Goat Cheese
  • top with Greens and drizzle entire pizza with Red Balsamic Vinegar Reduction
  • Slice, serve and ENJOY!

  • *White Balsamic Reduction (makes enough for two 14" pizzas):
    • in a non-reactive saucepan simmer until reduced to half
    • 1/4 Cup White Balsamic Vinegar
    • Cool and whisk in with
    • 1/4 Cup Extra Virgin Olive Oil
    • Toss with 4 Cups sliced Strawberries

  • **red Balsamic Reduction (makes enough for two 14" pizzas):
    • in a non-reactive saucepan simmer 3/4 Cup Aged Red Balsamic Vinegar until reduced to 1/4 cup

Notes:

  • we made our own pizza crust
  • since we where making a pizza that was larder than 14", we increased the amount of serveral of the ingredients indicated in the ingredients list.
  • for the greens we used what we had handy in the garden... spinach, lettuce, mustard greens, beet greens, rocket and lemon basil.
