Seafoam Frosting

Ingredients:

  • 2 egg whites
  • 1 1/2 cups dark brown sugar
  • 1/3 cup water
  • 1

Preparation:

  • Stir together egg whites, sugar and water together in top of double boiler.
  • With water boiling in bottom of double boiler, beat with electric mixer approximately 7 minutes or until frosting looks fluffly and holds soft shape.
  • Remove from water, add vanilla and beat until frosting forms stiff peaks.
  • Use to frost.

Notes:

  • Don't over-cook, it will become grainy.
  • You can substitute dark brown sugar with light brown sugar or white sugar and then add 1 tbsp light corn syrup.
  • Some recipes also include a bit of cream of tartar to give the final iced cake a thin "crust" when the icing sets.
