Caribbean Banana Bread

This bread is great to make when you have a bunch of overripe or frozen bananas to use up.

Ingredients:

  • 1/3 cup water
  • 3/4 cup mashed ripe banana
  • 2 tbsp vegetable oil, margarine or butter
  • 1 large egg
  • 3/4 tsp salt
  • 3 tbsp brown sugar, packed
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups whole-wheat flour
  • 1 tsp ground nutmeg or cinnamon
  • 1 1/4 tsp bread-machine yeast
  • 1/4 cup each raisins and chopped pecans (optional)

Preparation:

  • Add all ingredients except raisins and nuts to machine according to manufacturer's directions.
  • Select sweet or basic white cycle
  • Add raisins and nuts at ingredient signal (or about 20 to 30 minutes into cycle after the starting time).
