Confetti Cheese Bread

Ingredients:

  • 3/4 cup water
  • 3/4 tsp salt
  • 1 tbsp sugar
  • 2 tbsp instant skim-milk powder
  • 1/2 cup shredded carrot, lightly; packed
  • 1/3 cup each diced sweet green and red pepper
  • 3 cups all-purpose flour
  • 2 tsp dried Italian seasoning
  • 1 1/4 tsp bread-machine yeast
  • 3/4 cup coarsely diced old Cheddar cheese

Preparation:

  • Add all ingredients except cheese to machine according to manufacturer's directions.
  • Select basic white cycle.
  • Add cheese at ingredient signal (or about 20 to 30 minutes into the cycle).
  • Remove loaf immediately after baking, since it is very tender.

Notes:

  • Freeze cheese for 30 minutes before adding so it won't melt too quickly.
  • The moisture content of the vegetables can vary. Check the dough when you add the cheese and adjust the consistency if necessary.
