Sweet & Salty Pecan Sandies (aka Chip Cookies)

When I saw potato chips as one of the ingredients of these cookies I was intrigued so I just had to try them.  You can't really taste the chips but according to the recipe they're supposed to add a sublte, salty crunch to an otherwise traditional cookie.  Very tasty!

Ingredients:

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 tsp. vanilla
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/2 cup finely crushed potato chips
  • sugar or coarse grain sugar.

Preparation:

  • Heat oven to 350F.
  • Combine butter, sugar and vanilla in large bowl;
  • beat at medium speed until creamy.
  • Reduce speed to low;
  • add flour, pecans and potato chips;
  • beat until well mixed.
  • Shape dough into 1-inch balls;
  • flatten with palm of hand to approx 1/4 inch and place onto ungreased cookie sheets.
  • Gently press bottom of a glass on a cookie to get it slightly greased.
  • Dip glass into sugar and press lightly onto cookie to coat each cookie with sugar.
  • Bake for 10 to 12 minutes or until cookies are just set.
  • Cool 1 minute on cookie sheets; remove to cooling rack.
  • Cool completely.
