Challah Bread

Ingredients:

  • 1 cup water
  • 2 eggs
  • 1 1/4 tsp. salt
  • 3 tbsp. sugar
  • 3 tbsp. butter (room temperature)
  • 3 2/3 cups all-purpose flour (or bread flour)
  • 1 tsp. bread machine or instant yeast

    glaze:
  • 1 egg yolk
  • 1 tbsp. water
  • 1 tsbp. sesame seed (optional)

Preparation:

  • measure bread ingrediet into baking pan in the order recommended by the manufacturer.
  • insert oan into the over chamber.
  • select dough cycle.
  • remove dough to a lightly floured board; cover with a large bowl and let rest for 10 to 15 minutes.
  • divide dough into 5 portions.
  • roll each with the palm of your hand into long, smooth ropes 1 inch (2.5cm) in diameter.
  • taper at ends, leaving the middle thicker.
  • braid 3 rops and place on prepared baking sheet.
  • twist the remaining 2 ropes, pinching ends together.
  • center on the top of braid.
  • press lightly.
  • cover and let rise in a warm, draft-free place for 30 to 45 minutes, or until doubled in volume.
  • meanwhile, preheat oven to 375F (190C)
  • glaze: when dough has risen, beat together egg yolk and water.
  • brush the braid with glaze, and, if desired, sprinkle with sesame seed.
  • bake in preheated oven for 30 to 35 minutes, or until braid sounds holow when tapped on the bottom.
