Coffee Raisin Loaf

trying to figur out what to do with the extra strong coffee left over in the pot instead of just throwing it out? make a bread from it! this bread turned out yummy... and with the extra caffeine in it, I'm sure it would be great for breastfast time, or for an afternoon snack when you are stuck in a meeting!

Ingredients:

  • 1 1/3 cups freshly brewed coffee (room temperature)
  • 1 1/4 tsp. salt
  • 2 tbsp. packed brown sugar
  • 2 tbsp. vegetable oil
  • 2 3/4 cups all-purpose flour
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1/4 tsp. ground cloves
  • 1 tsp. bread machine yeast
  • 1 cup raisins

Preparation:

  • measure all ingredients except raisins into baking pan in the order recommended by the manufacturer.
  • insert pan into the oven chamber
  • select sweet cycle
  • add raisins at "add ingredients" signal.
