Grilled Tilapia With Balsamic Vinaigrette

Ingredients:
1 tbsp. balsamic vinegar
1 tbsp. orange juice
1 tbsp. thinly sliced fresh basil
1 tsp. dijon mustard
1/2 tsp. salt
1/4 tsp. pepper
4 tbsp. extra-virgin olive oil
4 tilapia fillets (6 oz each)
4 cups mixed baby greens
Preparation:
preheat grill to medium-high
combine the vinegar, orange juice, basil, mustard, 1/4 tsp. of the salt, and 1/8 tsp. of the pepper in a small bowl.
slowly whick in 3 tablesppons of the oil and set aside
brush the tilapia fillets with the remaining 1 tbsp. oil and sprinkle with remaining salt & pepper.
set the fillet on a grill rack that has been coated with cooking spray
grill for 3 1/2 to 4 minutes per side, or until the fish flakes easily with a fork
serve the fish on a bed of greens topped with the vinaigrette.
Notes:
I used half the recommended olive oil
i use the broiler instead of a grill
we didn't like the fish served on the greens... but we did like the fish & dressing.
