Grilled Tilapia With Balsamic Vinaigrette

Ingredients:

  • 1 tbsp. balsamic vinegar
  • 1 tbsp. orange juice
  • 1 tbsp. thinly sliced fresh basil
  • 1 tsp. dijon mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 tbsp. extra-virgin olive oil
  • 4 tilapia fillets (6 oz each)
  • 4 cups mixed baby greens

Preparation:

  • preheat grill to medium-high
  • combine the vinegar, orange juice, basil, mustard, 1/4 tsp. of the salt, and 1/8 tsp. of the pepper in a small bowl.
  • slowly whick in 3 tablesppons of the oil and set aside
  • brush the tilapia fillets with the remaining 1 tbsp. oil and sprinkle with remaining salt & pepper.
  • set the fillet on a grill rack that has been coated with cooking spray
  • grill for 3 1/2 to 4 minutes per side, or until the fish flakes easily with a fork
  • serve the fish on a bed of greens topped with the vinaigrette.

Notes:

  • I used half the recommended olive oil
  • i use the broiler instead of a grill
  • we didn't like the fish served on the greens... but we did like the fish & dressing.
