Spiced Pork Chops With Pear Relish

Ingredients:

  • 2 tsp (10 mL) ground cumin
  • 2 tsp (10 mL) ground coriander
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 4 bone-in centre-cut pork loin chops, (about 900 g)
  • 2 tsp (10 mL) vegetable oil

    Pear Relish:
  • 2 tsp (10 mL) vegetable oil
  • 1 small onion, sliced
  • 2 slices (1/4 inch/5 mm thick) fresh ginger
  • 1 stick cinnamon
  • 2 whole cloves
  • 1 pear, peeled, quartered, cored and sliced crosswise
  • 1/4 cup (60 mL) golden raisins
  • 2 tbsp (30 mL) cider vinegar
  • 2 tsp (10 mL) packed brown sugar

Preparation:

  • Pear Relish: In saucepan, heat oil over medium heat; cook onion, ginger, cinnamon and cloves, stirring occasionally, until onions are softened, about 5 minutes.
  • Stir in pear, raisins, 1/4 cup water, vinegar and sugar; bring to boil.
  • Reduce heat and simmer, stirring occasionally, until pear is softened, about 15 minutes.
  • Meanwhile, stir together cumin, coriander, salt and pepper; rub all over chops.
  • In large skillet, heat oil over medium heat; cook chops, turning once, until just a hint of pink remains inside, 10 to 12 minutes.
  • Serve with relish.

Notes:

  • i double the amount of pear recommended
