Stir-fried Bean Sprouts

"this is an easy way to cook up some tasty bean sprouts in a wok. it is not necessary to trim them. simply rinse in a bowl of cold water and discard and husks that float to the surface"

Ingredients:

  • 2-3 scallions
  • 2 tbsp. vegetable oil
  • 2 cups bean sprouts
  • 1 tsp. salt
  • 1/2 tsp. light brown sugar
  • few drops of sesame oil (optional)

Preparation:

  • cut the scallions into short sections about the same length as the bean sprouts.
  • heat oil in a wok and stir-fry the bean sprouts and scallions for about 1 minute.
  • add the salt and sugar and continue stirring for 1 minute.
  • sprinkle with the sesame oil, if using, and serve.
  • do not overcook, or the bean sprouts will become soggy
