Pineapple Jam

Ingredients:

  • 4 1/2 cups finely chopped pineapple (you should get that from 2 pineapples).
  • 1 box pectin crystals (not liquid)
  • 5 1/2 cups granulated sugar
  • juice of 1 lemon

Preparation:

  • Chop pineapples (chopped them very fine in the blender!)
  • add juice from lemon.
  • add pectin crystals and then put on high heat (until boiling)
  • stir in 5 1/2 cups of sugar and get it to a rolling boil for 1 minute.
  • stir for 5 minutes and put in jars
