Ginger Jelly

Ingredients:

  • 1 large apple
  • 3/4 cup peeled and freshly chopped gingerroot
  • 3/4 cup sugar
  • 1 cup water
  • 1 pouch liquid pectin

Preparation:

  • peel and core the apple, then chop finely
  • combine all ingredients, except pectin, and cook over medium heat until mixture begins to thicken, about 25 minutes
  • add the pectin and bring to a boil for 1 minute, stirring constantly
  • pour in sterilized jars and cover tightly.
  • process jar in water bath.
