Apple Almond Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 2/3 cup plain yogurt (150 ml)
  • 1/4 cup melted butter (50 ml) (optional)
  • 1/2 tsp almond extract (2 ml)
  • 2 apples, peeled and thinly sliced

    topping

  • 3 tbsp sliced blanched almonds (45 ml)
  • 2 tbsp granulated sugar (25 ml)
  • 1 tsp cinnamon

Preparation:

  • in bowl, stir together flour, sugar, baking powder, baking soda and salt.
  • in separate bowl, beat eggs; stir in yogurt, butter and almond extract.
  • stir wet ingredients into flour mixture just until combined.
  • pour into greased 9-inch (2.5L) springform pan.
  • arrange apples over batter.
  • combine almonds, sugard and cinnamon; sprinkle over apples.
  • bake in 350F (180C) oven for 1 hour

Notes:

If butter is omitted, each serving is approx. 230 calories
