Chickennat

Chickennat is a typical Ugandan chicken stew with groundnuts and egg yolks. The most common meats eaten in Uganda are chicken, beef, goat and mutton. In many poor rural areas, however, it is more common to eat vegetarian dishes and to eat meat only on special occasions.

Ingredients:

  • 2 - 3 lb chicken, cut into pieces
  • 1 tsp (5 g) salt
  • 1/2 tsp (2 ml) black pepper
  • 1/2 cup (120 g) butter
  • 1/2 cup (120 ml) onions, chopped
  • 1 pint chicken stock
  • 3/4 cup (177 ml) groundnut paste, or peanut butter
  • 2 egg yolks

Preparation:

  • Rub the chicken pieces with salt and pepper.
  • Melt the butter in a stewpot and add the chicken pieces and onion.
  • Cover, and turn flame very low.
  • Add the stock slowly, and let cook for 15 minutes.
  • Thin the peanut butter by adding 1/2 cup (120 ml) of the cooking liquid.
  • Add the mixture to the pot and bring to a boil.
  • Reduce heat and whisk the egg yolks then add them into the stew.
  • Stir, and simmer until the chicken is cooked.
