Leftover French Fry Breakfast Skillet

Ingredients:
oil
2 ounces chopped ham
1 shallot or half a small onion, diced (optional)
1/3 cup green pepper, diced (optional)
2 ounces of leftover French fries, chopped
2 eggs
1/4 cup milk or sour cream
1 tablespoon hot sauce
pinch of salt and pepper
grated cheddar cheese (for topping)
garlic chives and/or green onions for garnish
Preparation:
In a 6 inch cast skillet, heat oil over medium heat to coat.
When it starts to get hot, fry the onion, green pepper and ham.
Add the French fries.
Mix the eggs, milk (sour cream), hot sauce, salt, and pepper together.
Pour that mixture over the fries.
Bring temp down to medium low and put a lid on the skillet, and cook for about 6-8 minutes, or until the eggs are set.
Add the shredded cheese and green onion or chives.
Heat broiler on high.
Put skillet in oven until cheese gets all bubbly and nice.
Using a knife, run the knife around the side of the pan and it will release the bottom
