Leftover French Fry Breakfast Skillet

Ingredients:

  • oil
  • 2 ounces chopped ham
  • 1 shallot or half a small onion, diced (optional)
  • 1/3 cup green pepper, diced (optional)
  • 2 ounces of leftover French fries, chopped
  • 2 eggs
  • 1/4 cup milk or sour cream
  • 1 tablespoon hot sauce
  • pinch of salt and pepper
  • grated  cheddar cheese (for topping)
  • garlic chives and/or green onions for garnish 

Preparation:

  • In a 6 inch cast skillet, heat oil over medium heat to coat. 
  • When it starts to get hot, fry the onion, green pepper and ham. 
  • Add the French fries. 
  • Mix the eggs, milk (sour cream), hot sauce, salt, and pepper together. 
  • Pour that mixture over the fries. 
  • Bring temp down to medium low and put a lid on the skillet, and cook for about 6-8 minutes, or until the eggs are set. 
  • Add the shredded cheese and green onion or chives. 
  • Heat broiler on high. 
  • Put skillet in oven until cheese gets all bubbly and nice. 
  • Using a knife, run the knife around the side of the pan and it will release the bottom
