Katie's Chicken Noodle Soup

There are times when only chicken noodle soup will do. And when only chicken noodle soup will do, this is the recipe for you. Full of flavour, it's quick and easy to make and you'll be able to slurp up a bowl in no time at all.

Ingredients:

  • 2 tbs olive oil
  • 1 onion (diced)
  • 1 carrot (diced)
  • 2 celery stalks (diced)
  • 2 l chicken stock (liquid)
  • 2 cups fusilli pasta (small, skins removed, shredded)
  • 2 BBQ chicken breast (skin off, shredded)
  • 1/4 cup fresh flat-leaf parsley (chopped)
  • salt and pepper (to taste)

Preparation:

  • Place chicken stock in a heatproof container and microwave for 5 mins.
  • Heat olive oil in a pot and add onions, carrots and celery.
  • Saute for 3 mins until the vegetables are transparent.
  • Add hot stock and bring to the boil.
  • Add pasta and return to the boil for 7 minutes until the pasta is cooked.
  • Add shredded chicken and parsley.
  • Stir and serve.
