Curried Beef Pitas With Cucumber Sauce

Ingredients:

  • 1 cup fat-free plain Greek yogurt
  • 1 cup finely chopped peeled cucumber
  • 1 tablespoon minced fresh mint
  • 2 garlic cloves, minced
  • 2 teaspoons snipped fresh dill
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt

  • 1 pound lean ground beef (90% lean)
  • 1 small onion, chopped
  • 1 medium Golden Delicious apple, finely chopped
  • 1/4 cup raisins
  • 2 teaspoons curry powder
  • 1/4 teaspoon salt

  • 8 whole wheat pita pocket halves

Preparation:

  • In a small bowl, mix the first seven ingredients.
  • Refrigerate until serving.
  • In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain.
  • Add apple, raisins, curry powder and salt; cook until apple is tender, stirring occasionally.
  • Serve in pita halves with sauce.
