Ingredients:
olive oil
1/2 onion, diced
6 carrots, chopped in rounds
2 potatoes, peeled and cubed
1.5 litres (6 cups) vegetable broth
1 tbsp. Fresh Thyme
sour cream (optional)
Preparation:
In a pot, heat a little olive oil over medium heat.
Cook the onion for 1 to 2 minutes.
Add carrots and potatoes.
Cook for 3 to 4 minutes
Pour in the vegetable broth
Add salt, pepper, and thyme
Bring to a boil, then simmer for 25 minutes over medium heat
Transfer the preparation into the container of the electric mixer.
Mix for 1 minute until smooth
Return the mixture to the pot and heat for 1 minute
Serve with sour cream if desired.
