Carrot Soup

Ingredients:

  • olive oil
  • 1/2 onion, diced
  • 6 carrots, chopped in rounds
  • 2 potatoes, peeled and cubed
  • 1.5 litres (6 cups) vegetable broth
  • 1 tbsp. Fresh Thyme
  • sour cream (optional)

Preparation:

  • In a pot, heat a little olive oil over medium heat.
  • Cook the onion for 1 to 2 minutes.
  • Add carrots and potatoes.
  • Cook for 3 to 4 minutes
  • Pour in the vegetable broth
  • Add salt, pepper, and thyme
  • Bring to a boil, then simmer for 25 minutes over medium heat
  • Transfer the preparation into the container of the electric mixer.
  • Mix for 1 minute until smooth
  • Return the mixture to the pot and heat for 1 minute
  • Serve with sour cream if desired.
