Yogurt Waffles

Ingredients:

  • 3 eggs
  • 1 1/2 cups plain yogurt
  • 1/4 cup shortening
  • 1 1/4 cups sifted flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Preparation:

  • Preheat waffle iron.
  • Beat the eggs until light and frothy.
  • Set aside.
  • In a separate bowl mix together the yogurt and shortening until smooth.
  • Mix in the flour, baking powder, baking soda and salt.
  • Gently stir in the eggs until combined.
  • Ladle 1 scoop (about 1/4 cup or more depending on your waffle maker) into the preheated waffle iron and cook according to the manufacture's instructions.

Notes:

  • Serving suggestion: Excellent with heated blueberries and maple syrup.
