In a separate bowl mix together the yogurt and shortening until smooth.
Mix in the flour, baking powder, baking soda and salt.
Gently stir in the eggs until combined.
Ladle 1 scoop (about 1/4 cup or more depending on your waffle maker) into the preheated waffle iron and cook according to the manufacture's instructions.

Serving suggestion: Excellent with heated blueberries and maple syrup.
