banana muffins

We got this recipe from our friend Marianne and it's a go-to recipe for quick easy muffins for the kids' school lunches.
Makes 1 dozen muffins. (Pictures show us making a double batch... cause why would you ever just make a single batch!? And by making the muffins a bit smaller, I usually manage to fill a tray of mini muffins also)

Ingredients:
- 1 cup mashed ripe bananas*
- 1 cup mayonnaise
- 1 cup white sugar
- 2 cups all purpose flour
- 2 tsp baking soda
- 1/2 cup currants (optional, can add more or less as desired)**
Preparation:
- mix all ingredients in a large bowl.
- spoon mixture into greased muffin pan.
- bake @ 350 F for 20 - 25 minutes
notes:
- *About 3 bananas... I often freeze bananas that are getting overripe and then I thaw them in the microwave to use up in this recipe.
- **I've made this recipe without any flavourings, with butterscotch chips or with frozen red currants. Would probably also work well with blueberries, chocolate chips, nuts, etc.
- Other tips: Can also be made into mini muffins or loaves (adjust baking times accordingly).
