best-ever apple pie

(according to the canadian living recipe book i took this from)
Ingredients:
easy-roll pastry:
3/4 cup shortening
3 tbps butter, softened
2 1/4 cups all-purpose flour
3/4 tsp. salt
1/2 cup ice water
filling:
8 cups thinly sliced peeled tart apples
2 tbsp. lemon juice
1/2 cup granulated sugar
3 tbsp. all-purpose flour
1/2 tsp. cinnamon
glaze:
1 egg yolk
2 tsp. granulated sugar
Preparation:
easy-roll pastry:
in bowl, beat shortening with butter until smooth
stir in flour and salt until ragged
pour in water
stir until loose dough forms
gather into 2 balls
on floured surface, gently press each into 3/4-inch thick disc
wrap in plastic wrap and refrigerate for at least 1 hour or until chilled
on lightly floured surface, roll out 1 of the discs into 13-inch circle
fit into 9-inch pie plate
trim, leaving 3/4-inch overhang
filling:
in large bowl, toss apples with lemon juice
stir together sugar, flour and cinnamon
sprinkle over apples and toss until coated
scrape into pie shell
roll out remaining pastry to same size circle
brush pastry on rime with ater
fit pastry over filling
trim, leaving 3/4-inch overhang
fold overhang under pastry rim
seal and flute edge
glaze:
whisk egg yolk with 1 tbsp water
brush over pastry
sprinkle with sugar
cut steam vents in centre
bake in bottom third of 425F oven for 15 minutes
reduce heat to 350F
bake for 40 minutes longer or until golden, filling is bubbly and apples are soft
let cool on rack.
