Breakfast
Prepared:
2008-04-29
Ingredients:
1 1/4 cups flour
1 tsp baking powder
3 pinches of salt
2/3 cup milk
1 egg
1/4 cup superfine sugar
1 cup fresh blueberries
2 Tbsp unsalted butter
To serve (optional):
1 large banana peeled and sliced
maple syrup
Preparation:
Sift the flour, baking powder, and salt into a mixing bowl.
Stir in the sugar with a wooden spoon and set the bowl aside.
Crack the egg into a bowl, add it to the milk, and whisk them together.
Do this in a measuring cup so the mixture can be poured easily
Pour the milk and egg mixture into the flour and beat with a wooden spoon.
Gently fold in the blueberries, being careful not to crush them.
Over medium heat, melt a quarter of the butter in a large frying pan.
When the butter begins to bubble, you are ready to start cooking!
Ladle two spoonfuls of batter into the frying pan.
Fry the pancakes for 2 minutes or until bubbles appear on top and the undersides turn golden.
Use a spatula to flip the cakes and cook the other side for 2 minutes or until the cakes are cooked through.
Repeat with the rest of the batter.
makes 8 servings
