Campfire Apples
What better way to get your fibre when you're camping than with this quick, healthy and delicious treat? My guests thought that the main ingredient in the apples was brown sugar. They couldn't believe it was All-Bran*! Of course, you can also do this recipe in the oven, but what fun would that be?
Ingredients:
- 1/2 cup All-Bran Original* cereal or All-Bran Buds cereal
- 1/4 cup chopped pecans
- 1/3 cup dried cranberries
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 4 baking apples
- lemon juice for rubbing the insides of the apple
- 4 tsp maple syrup
- aluminum foil
Preparation:
- In a small bowl mix together the All-Bran* cereal, chopped pecans, cranberries, cinnamon and nutmeg. (You can prepare this ahead of time and bring it along on a camping trip in a ziploc bag)
- Prepare the apples by cutting a plug-like lid from the top (like you would when carving a pumpkin) and then spooning out the core and some of the inside of the apple without going through the bottom.
- Rub lemon juice on the insides of the apples.
- Fill the apples with the cereal mix.
- Add a tsp of maple syrup on top of the cereal mix of each apple.
- Replace the lids of the apples.
- Place each apple on a square of aluminum foil and wrap, keeping the apples upright.
- Place apples in a bed of hot coals to cook for about 10 minutes or until apples are tender.
tips:
- This recipe can also be made in your oven by placing the wrapped apples on a cookie sheet and baking at 350 F for 50-60 minutes, or until apples are tender.
