Ingredients:
- Crust:
- 1/2 cup hard margarine (or butter), melted
- 2 cups vanilla wafer crumbs
- Filling:
- 2 tbsp hard margarine (or butter), melted
- 1 tsp granulated sugar
- 2 cups sliced cooking apples (such as macintosh), about 2 medium
- 1/2 cup caramel (or butterscotch) sundae topping
- 16 oz light cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla
- 2 large eggs
- Toppings:
- 1/2 cup caramel (or butterscotch) sundae topping
- 1/4 cup sliced almonds, toasted
Preparation:
- Crust:
- melt margarine in medium saucepan.
- Stir in wafer crumbs.
- Press into bottom and 1 inch (2.5 cm) up sides of ungreased 9 inch (22 cm) springform pan.
- Bake in 350 F (175C) oven for 10 minutes.
- Filling:
- Combine margarine and first amount of sugar in frying pan.
- Add apple.
- Sauté until apple is soft but not mushy.
- Spoon over crust.
- Drizzle first amount of sundae topping over apples.
- Cool.
- Beat cream cheese, second amount of sugar and vanilla together in medium bowl.
- Beat in eggs, 1 at a time, until just blended.
- Pour over apple.
- Bake in 350 F (175 C) oven for 45 to 50 minutes until set.
- Cool completely.
- Chill.
- Cut or mark off into 12 wedges.
- Topping:
- Spoon about 2 tsp sundae topping over individual weges.
- Sprinkle each with 1 tsp almonds.
note: to toast almonds, place in single layer in ungreased shallow pan. Bake in 350F (175C) oven for 5 to 10 minutes, stirring or shaking often, until desired doneness. Alternatively place in single layer in a frying pan and toast on stove top, stirring or shaking oftne, until desired doneness.
