chicken fried with cashew nuts (kai phad met ma muang)

Ingredients:
- 300g boneless skinned chicken breasts cut into slices
- all-purpose flour for coating
- 1 cup (225 ml) peanut or corn oil
- 4 dried red chillies cut into 1 cm pieces
- 1 tbsp chopped garlic
- 10 spring onions (white parts) cut into 1 cm pieces
- 1/3 cup (50 g) unsalted roasted cashew nuts
- 1 onion sliced
- 2 tbsp oyster sauce
- 1 tbsp soya sauce
- 1 tbsp sugar
Preparation:
- Coat the chicken lightly with flour.
- Heat the oil in a pan or wok for about 5 minutes until light brown.
- Remove almost all the oil from the pan.
- Add the chilli and garlic to the chicken in the pan and fry for 1 minute.
- Add all the remaining ingredients.
- Fry until cooked, about 3 more minutes.
Notes:
To fry the chicken I set the wok to 375-400 F.
For the rest of the ingredients after the chilli and garlic, I lowered the heat to about 300 F.
I added a tiny bit of water near the end to make it a bit more saucy.
