chicken raspberry

Prepared: 2007-11-30

Ingredients:
- 1 tbsp. butter
- 1 tbsp cooking oil
- 6 boneless, skinless chicken breast halves
- salt, sprinkle
- pepper, sprinkle
- 1/4 tsp. ground rosemary
- 1/4 cup finely chopped onion
- 1/3 cup raspberry vinegar
- 1/2 cup water
- 1 tsp. chicken bouillon powder
- 1 tsp. dried chives
Preparation:
- heat butter and cooking oil in frying pan
- add chicken
- brown both sides, sprinkling with salt, pepper and rosemary
- transfer to plate
- keep warm
- sauté onion in same fryin pan, scraping up any browned bits from pan, unitl golden
- add vinegar, water and bouillon powder
- boil for 5 minutes until slightly reduced
- makes 1/3 cup sauce
- add chives
- stir
- add chicken
- bring to a boil
- reduce heat
- cover
- simmer for about 5 minutes to blend flavours
makes 6 servings @ 173 calories per serving
