chicken stroganoff

this dish is based on the classic russian dish, which is made with fillet of beef, and it is just as good.
Ingredients:
- 4 boneless, skinless chicken breasts
- 45ml - 3 tbsp olive oil
- 1 large onion, thinly sliced
- 225g - 8oz mushrooms, sliced
- 300ml - 1/2 pint - 1 1/4 cups soured cream
- Salt and ground black pepper
- 15ml - 1 tbsp chopped fresh parsley to
garnish
Preparation:
- divide the chicken breasts into two natural fillets, place between two sheets of clear film and flatten each to a thickness of 5mm - 1/4in with a rolling pin
- cut into 2.5cm - 1in strips diagonally across the fillets
- heat 30ml - 2 tbsp oil in a large frying pan and cook the sliced onion slowly until soft but not coloured.
- add the mushrooms and cook until golden brown.
remove and keep warm.
- increase the heat, add the remaining oil and fry the chicken very quickly, in small batches, 3-4 minutes until lightly coloured.
remove and keep warm while frying the rest of the chicken.
- return all the chicken, onions and mushrooms to
the pan and season with salt and pepper.
stir in the soured cream and bring
to the boil.
sprinkle with fresh parsley and serve immediately
