recipe from "cape breton pictorial cookbook"
a gift from my aunt babara

Ingredients:
- 2 cups raw potatoes, diced
- 1/2 cup onion, chopped
- 4 tbsp. butter
- 2 cups boiling water
- 3 cups creamed corn
- 2 cups milk, heated
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. thyme
- 1 tbsp fresh parsley, chopped
Preparation:
- peel and dice potatoes
- place in cold water until needed
- melt butter in saucepan
- sauté chopped onion until tender
- drain potatoes and toss into onion mixture
- add boiling water, salt, pepper and thyme
- simmer until potatoes are tender
- add corn and milk
- simmer for 15 minutes (do not boil)
- add chopped parsley and taste to adjust

makes 6 servings
