corn on the cob in rich onion sauce

Ingredients:
- 4 corn cobs, thawed if frozen
- vegetable oil, for frying
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 2in piece fresh root ginger, crushed
- 1/2 tsp ground turmeric
- 1/2 tsp onion seeds
- 1/2 tsp cumin seeds
- 1/2 tsp five-spice powder
- 6-8 curry leaves
- 1/2 tsp granulated sugar
- 1 cup natural (plain) yogurt
- chili powder, to taste
Preparation:
- cut each corn cob in half, using a heavy knife or cleaver to make clean cuts
- heat oil in a wok, karahi or large pan and fry the corn until golden brown
- remove the corn and set aside
- remove any excess oil, leaving 2 tbsp in the wok
- grind the onion, garlic and ginger to a paste using a pestle and mortar or in a food processor
- transfer the paste to a bowl and mix in the spices, chilli powder, curry leaves and sugar
- heat the oil gently and fry the onion paste mixture for 8-10 minutes until all the spices have blended well and the oil separates from the sauce
- cool the mixture and fold in the yogurt
- mix to a smooth sauce
- add the corn and mix well, so that all the pieces are covered with the sauce
- reheat gently for about 10 minutes
- serve hot
