Pie
Prepared:
2004-12-16
Ingredients:
2 cups fresh or frozen cranberries
1/3 cup sugar
1/4 cup chopped walnuts (optional)
1 egg
1/2 cup sugar
1/2 cup flour (wheat flour, brown rice flour)
6 tablespoons melted butter
1 regular 8-9" frozen pie shell (thawed)
Preparation:
spread the cranberries in the bottom of the pie shell
sprinkle with 1/3 cup sugar and nuts
set aside
beat the egg
add melted (but not too hot) butter and 1/2 cup sugar
stir with a wooden spoon until completely mixed
add flour and continue until smooth
pour this batter gently over the cranberries and spread it gently out to the edge of the pie crust with a rubber spatula
work quickly as the batter will tend to firm up in just a couple of minutes
bake at 350 degrees farenheit for 45 - 55 minutes or until the crust is golden brown on top
