french onion soup
Ingredients:
4 large white onions
1-1/2 tbsp (21 mL) butter
1 tsp (5 mL) sugar
5 cups (1.25 L) beef broth, (homemade if possible)
5 cups (1.25 L) water
6 slices French bread, (dried)
1 cup (250 mL) grated mozzarella cheese
1/4 cup (60 mL) grated parmesan cheese
Preparation:
cook onions in butter 1 hour over low heat.
stir often. (onions will decrease in volume.)
add sugar.
increase heat to medium.
stir constantly until onions turn caramel in colour.
add consommé or beef broth and water.
simmer 5 minutes.
add pepper and salt to taste.
place french bread in soup bowls.
pour soup over.
top with cheeses.
broil until lightly browned.
