Hawaiian Chicken Kabobs
Ingredients:
- 3 tablespoons soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons sherry
- 1 tablespoon sesame oil
- ¼ cup rice vinegar
- 1/4 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 8 skinless, boneless chicken breast halves – cut into 2 inch pieces
- 1 (20 ounce) can pineapple chunks, drained
- Skewers
Preparation:
- Place your skewers in water for several hours so they don’t burn during the grilling process
- in a zip lock bag, mix the soy sauce, brown sugar, sherry, sesame oil, vinegar, ginger, and garlic powder.
- Stir the chicken pieces into the marinade until well coated.
- Cover/close, and marinate in the refrigerator overnight or at least 2 hours
- I would recommend over night the intensity of the flavors is much more pronounced the longer it marinates.
- Don’t marinate the pineapple or veggies if you use any in the same bag/container as the chicken.
- If need be just make another batch of marinate and use that.
- The acidity of the pineapple will change the way the chicken tastes and its texture as well.
- reheat grill to medium-high heat.
- Lightly oil the grill grate.
- Thread chicken and pineapple alternately onto skewers.
- Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear

- we enjoyed this recipe, and would make it again.
- we only grilled the meat on the skewer.
