Herbed Brown Rice
Ingredients:
- 2-1/2 cups (625 mL) water
- 1 tsp (5 mL) dried parsley
- 1 tsp (5 mL) dried thyme
- 1/2 tsp (2 mL) each of salt and pepper
- 1 cup (250 mL) parboiled whole-grain rice
- 1 cup (250 mL) frozen peas, (if desired)
directions:
- In 6-cup (1.5 L) covered casserole, stir together water, parsley, thyme, salt and pepper.
- Stir in rice; cover and bake in 400°F (200°C) oven until rice is tender and water is absorbed, about 45 minutes.
- Stir in peas (if desired); bake until hot, about 5 minutes. Let stand for 5 minutes.
- Fluff with fork.
Note:
- we didn't add the peas and the rice still turned out good.
